Method

1

Season chicken

Heat oven to 425°F. Pat thighs dry, rub with olive oil, and season with salt, pepper, smoked paprika and garlic powder.

2

Make the glaze

Whisk maple syrup, both mustards, vinegar, oil, minced garlic, thyme, rosemary, salt and pepper. Reserve 3 tablespoons in a clean bowl for the final glaze.

3

Prepare vegetables

Cut potatoes into 1-inch pieces, carrots into thick diagonal pieces and onion into wedges. Toss with oil, salt, pepper and thyme. Spread in a large roasting pan.

4

Roast vegetables

Roast vegetables uncovered at 425°F for 15 minutes.

5

Add chicken

Nestle thighs skin-side up among vegetables. Brush with glaze, spoon the main bowl’s remaining glaze over vegetables, and roast 25–30 minutes.

6

Glaze again

Brush with reserved clean glaze; toss vegetables gently. Roast another 10–15 minutes, until chicken reaches at least 165°F (175–185°F for more tender thighs) and potatoes are tender.

7

Rest and serve

Rest chicken 5–10 minutes. Spoon pan juices over vegetables, garnish with parsley or thyme, and serve.

What makes it work

Roasting at 425°F browns the skin and vegetables. Maple contributes caramelization while mustard and vinegar balance its sweetness. Starting potatoes early helps everything finish together.

Suggested swaps

Try drumsticks instead of thighs (cook to temperature), sweet potatoes instead of Yukon Golds, or add Honeycrisp apple wedges for the last 20–25 minutes. These variations have not been independently tested.

Notes + storage

Refrigerate within 2 hours. Store 3–4 days; reheat to 165°F. Freeze chicken up to 2–3 months for best quality. Optional sauce: simmer pan juices with ¼ cup GF stock, 1 tsp Dijon, 1 tsp maple syrup and 1 tsp cider vinegar for 3–5 minutes.
